While the kids are out of school, you might be looking for inspiration for something healthy and fun to cook that they’ll love. Why not take advantage of all of summer’s delicious, fresh fruits and vegetables and get the whole family involved in the cooking process? Here are some recipes we can’t wait to try in our kitchens:
Rainbow Fruit Skewers
• Cubed/cut fruit of your choice – try watermelon, strawberries, raspberries, cantaloupe, pineapple, honeydew, blueberries and grapes for a rainbow look!
• Chocolate chips
• Coconut oil
• Wooden skewers
Have an adult or an older child with supervision cut the fruit into bite-sized pieces. Kids of all ages will have fun putting the fresh fruit pieces onto skewers in the pattern of their choice. In a microwave safe bowl, melt chocolate chips and a small amount of coconut oil and stir until smooth. Drizzle the chocolate mixture over the skewers and refrigerate until the chocolate has set (10-20 minutes). Dig in!
Summer Fruit Dessert Pizza
• 8 oz. of your favorite sugar cookie dough recipe (or try Food Network's recipe here)
• 4 oz. cream cheese
• ¼ c. honey
• Dash of cinnamon
• ¼ tsp. vanilla
• Fresh fruit of your choice, sliced into bite-sized pieces
Spray the inside of a springform pan with cooking spray and press the sugar cookie dough into the bottom, making sure to make a “crust” around the edges. Cook according to package instructions or 15-17 minutes, until it has cooked throughout. Set aside to cool. In a small bowl, mix together cream cheese, honey, cinnamon and vanilla. Spread in an even layer over the crust. Top with fresh fruit and cut into “slices.” Enjoy!
