When I first came to America a little over twenty years ago, I experienced a similar transformation. I spoke little English and was largely unfamiliar with many aspects of American culture. Time has passed, I can say without a doubt that Owasso is my home. I have my heart here, where my family and my dreams have become a reality in a place that is safe to have your kids growing up in excellent schools around people with positive values.There are so many things that I’ve learned in my seventeen years of working in customer service. New perspectives and a different language and culture have given me a great opportunity to provide for my family and help others explain situations and find solutions in their own language.I always tell people that I know more ways to say things in Spanish now than when I lived in Venezuela because during this journey, I have connected with so many people from different backgrounds and traditions that have only enriched my experience here. This is possible only because companies like Capital Homes have welcomed our voices to widen perspectives, empathize with others, and provide a better customer experience.Two years ago, my life changed, and we built our new home with Capital Homes. The experience was so easy and smooth. Easy-Peasy Delicious Tortilla Soup

We know... IT'S COLD OUTSIDE!!! How about warming those houses and belly's with something delicious and giving your kitchen an excuse to use it. Don't worry! This list of ingredients isn't going to break the bank or cause a hefty list of "to do's" while making it. This is our "go-to" for cold weather and filling our homes with happiness. Trust me. You won't be disappointed! Let's get to cooking!Ingredients: 1lb of chicken breasts1 medium onion (sliced) 2 gloves of garlic1 15 ounce can of beef or chicken broth1 cup of water1 15 ounce can of corn (undrained)1 15 ounce can of diced tomatoes and green chiles (undrained) If you don't want a little spicy kick, don't add the chilies.1 11 ounce can of black beans1 11 ounce can of enchilada sauce1 packet of taco seasoning1/2 teaspoon of chili powder1 teaspoon of cuminsalt and pepper to tasteshredded cheese for toppingsour cream for toppingcrunchy tortilla chip strips for toppingLet's do it!1. Place the cleaned chicken breasts in the bottom of a 5 quart crock pot.2. Season the chicken with salt and pepper.3. Add in the diced tomatoes and minced garlic. 4. Then pour in the broth, water, corn, diced tomatoes and enchilada sauce. 5. Sprinkle with taco seasoning and chili powder and stir baby, stir!6. Place that lid on the crockpot on low and cook for 8-10 hours. 7. About 15 minutes before you are ready to serve, take the chicken breast out and shred them up using two forks. The chicken will shred very easily! 8. Then put the shredded chicken back in the crockpot and stir.9. Let the soup cook for about another 15 minute, then serve!10. Make sure to top your soup with shredded cheese, a scoop of sour cream and tortilla chips and add cilantro to make it pretty!From our kitchens to yours... stay warm and bon appétit!
